This just won’t happen in a slow cooker, instant pot, or oven, and you just can’t buy this type of flavor. And lastly, our homemade ranch seasoning classifies as a best recipe all on its own.
While pork chops might not sound like the healthiest thing in the world, they’re really not so bad! In fact, what if I tell you that pork chops are good for your diet plan and an excellent meal for the whole family.
This ranch pork chops recipe is not only insanely delicious. It also happens to be low carb and keto-friendly with only 2g net carbs and gluten-free. Which makes this recipe perfect for everyone.
What you Need to Cook Ranch Pork Chops
As this is a quick and easy recipe, there isn’t much-needed equipment. This also means that cleanup is fast and easy as well, which is another added bonus!
Equipment
- 12″ Lodge cast iron skillet.
- A spatula or wood spoon
- A stove
Ingredients
- 6 thick-cut boneless pork chops (Note 1)
- 8 oz full-fat cream cheese softened and cut into 8 pieces (parmesan cheese can substitute this if you prefer)
- 8 tbsp salted butter (olive oil also works)
- 1/2 cup heavy cream
- 1/2 cup organic chicken broth (low sodium)
- 3 tbsp homemade ranch seasoning
- sea salt apply liberally
- ground black pepper apply liberally
Most of these are pretty standard ingredients that are likely already on your shopping list. The one standout on the list might be ranch seasoning, which adds a unique taste to the smothered pork chops. You can pick it up from a local grocery store or supermarket. But if you have a bit more time and would like to make your own, you’ll find it relatively easy. Ranch seasoning is actually made up of pretty common spices and herbs. It can even be healthier or more enjoyable if you make your own and leave some less desirable ingredients.
How to Cook Keto Ranch Pork Chops
Not only is the cooking procedure for this keto pork chop recipe easy to follow and hassle-free, but it’s also deceptively quick. With a total time of well under 30 minutes, this keto pork recipe is perfect for a large variety of events and meals.
- Start by patting your chops dry and sprinkling them very liberally with salt and pepper. Season liberally as both salt and pepper are absent from the sauce. (Note 2)
- Next, put your cast iron skillet on medium-high heat and melt 8 tablespoons of butter in it. You can also substitute this with olive oil if you prefer.
- Now, place the pork chops in the melted butter and sear them for about 4-5 minutes.
- When the pork chops reach around 135°F or 57 °C degrees, they are done. Remove and let these golden pork chops rest while you continue. Reduce heat to medium.
- Next, pour in the chicken stock. You’ll need this to deglaze the skillet. While this is still going on, use a spoon to scrape the skillet’s sides to ensure that you get all the delicious brown bits. Continue until sufficiently deglazed. (Note 3)
- Add cream cheese and heavy cream. You’ll need to stir the resulting mixture till it’s homogenous and smooth.
- Then add in the homemade ranch seasoning and continue stirring until it also combines with the ingredients. This is the cream sauce.
- Finally, lower the heat another notch and reintroduce the pork chops into the cream sauce in the cast iron skillet. Cover it and leave for about 5-10 minutes, then check to see if everything is satisfactorily done. You’re aiming for an internal temperature of 145 °F or 63 °C. (Note 4)
Tips to Make the Best Pork Chops
- The best pork cuts include boneless pork chops, loin chops, and center cut, bone-in chops.
- Dry the pork chops! When you sear meat, including pork chops, pat dry with a paper towel to absorb surface moisture. If meat is not dry, it will not sear properly and turn grey rather than golden brown.
- When searing meat in your cast iron skillet, leave at least 1 inch between each pork chop. And do not move the pork chops around during the searing process. This will disrupt the sear!
- Other seasonings like onion powder can also help to give your pork some more flavor. And ingredients like green beans can do wonders for variety. But you should never go overboard seasoning pork. Keep that in mind as you mix and explore.
- You’ll need your sauce thick to complement the meat properly, so if it hasn’t reached that point when the pork chops are done, leave the heat on and take the pork chops out. Continue until you get the thickness you need. This is common practice for any sauce. Simmering reduces moisture, which in turn thickens the sauce.
- When adding your own touch to the recipe, keep in mind that your changes affect the overall carb content and keto eligibility of these already delicious keto pork chops.
- If you’re not a pork fan (or follow a kosher diet), you can easily substitute the pork in the recipe with chicken. I suggest breasts. They’ll taste just as good as pork chops. Call it by the eye on this one, though.

Once cool, store in an airtight container like the Snapware 6 cup container, airtight, leak-proof, freezer safe, dishwasher safe, and microwave safe. Place the pork chops on the bottom and cover with sauce. Store in the fridge for 4-5 days (reheat in microwave) or freeze for up to 3 months (unthaw in the refrigerator for 24 hours, reheat in microwave).
Meal prep storage is easy! One pork chop per serving, planning out amounts is easy. However, I’ll admit I’ve eaten more than my share on several occasions.
Can I cook Keto Ranch Pork Chops in an Instant Pot?
Yes, you can! Even though this is a pan-fried pork chop recipe, it can still be made in an instant pot, crockpot, or slow cooker. The outcome does vary, but overall these ranch pork chops with homemade ranch seasoning come out great regardless of the method.
With the built-in saute and slow cook function on your Instant Pot, you can easily coax out all the dish’s latent flavor potential. This method requires far less effort on your part, as the Instant Pot is a leave-and-forget device with excellent safety features.

Easy Ranch Pork Chops with Homemade Ranch Seasoning
Ingredients

- In a large skillet, heat 8 tbsp of the butter over medium high heat until melted.
- Sear each chop for 4-5 minutes on each side until golden brown. When you've achieved a satisfactory golden brown crisping, turn the pork chops over and sear the other side as well. Note X
- When the pork chops reach around 135°F or 57 °C degrees they are done. Remove and let these golden pork chops rest while you continue. Reduce heat to medium.
- Pour in chicken broth to deglaze pan. Scrape the pan to get all of the yummy browned bits.
- Add cream cheese, and heavy cream and stir continuously until smooth.
- Add homemade ranch seasoning and stir until combined.
- Reduce heat to low, add chops back into pan and cover. Simmer for 10 minutes or until chops reach an internal temp of at least 145 degrees F.

For obvious reasons when cooking any meat, specifically 6 decent sized pork chops, it will be greasy.
Option 1: Cook the pork and drain the grease
Option 2: Trim the fat from the pork before cooking
Option 3: Reduce the butter if you must
There is really no magic trick to cooking meat without grease. You can reduce the amount by using the options above but you will reduce the overall flavor profile. Best to think of this like gravy and not grease.
Also it is worth a mention. You CAN”T buy this kind of flavor!.

I just made this recipe and they were delicious! I cooked my chops in a crock pot without the cream or cream cheese. When the meat was done I added those 2ingred. And with an immersion beater got a smooth gravy. I added 1/2 tsp guard gum to help thicken it and it was great!

Hard to say, possibly a lack of moisture, or difference in heavy cream. A good deglaze with chicken brooth, use more if needed. Followed by adding soft cream cheese, butter and heavy cream. I really like to make sure it is fully combined, and smooth before adding the pork chops back to simmer.

Made this tonight and eating it right now. Super rich, but SO delicious. I’m making this tonight. I have found that with cream cheese it will blend more smoothly if it’s fully softened. My sauce separated almosted as soon as I add the ranch powder and worse when I added the chops. I know it isn’t the recipe, it has to be something I did wrong. All the butter is visible everywhere and everything else looks like lumps, it’s not a saucey consistency at all, unless of course you’re into scampy lol.

Oh no! Was your cream cheese fully softened? I know that can cause issues. Some slight butter separation is normal during the simmer process (keep stirring), and it’s a thin cream sauce but it also shouldn’t be weirdly separated. How did it taste?

Don’t usually bother to leave reviews but this is an exception for an exceptionally good recipe. Everyone in our house loved it, even my picky daughter who doesn’t like sauce on anything. We cooked it with the pork as suggested, topped our broccoli with it, and then used some of the leftover sauce with some leftover plain pulled chicken and that was equally delicious. I followed directions, but wonder if the cream cheese wasn’t soft enough? Anything like this happen when you’ve made it before? Thanks!

Initially it will be separate because of the butter, but it should mostly combine. I just stirred it continuously until it was. I did notice some slight separation again after simmering but just a bit along the edge of the pan. I can never get the cream cheese to fully combine but I am impatient and don’t let it soften enough. A microwave may help that, but I don’t have one so I don’t know for sure.

Any time I am using cream cheese I will mix all of my wet ingredients in the bowl and pop it in the microwave to basically melt the cream cheese to a smooth consistancy. Also frozen vs refrigerated cream cheese has different textures.
