    The ultimate snack has arrived!!! These 15 minute no-bake caramel chocolate haystack cookies are sure to delight anyone who is craving something sweet. The smooth caramel, mixed with pecan nuts and coconut flakes, gives these cookies a devilishly tasty sweetness combined with the chocolate chips on top.

    If you have been searching for something simple, delicious, and no-bake, then this chocolate haystacks recipe is the snack you have been looking for!

    They are surprisingly easy to make and perfect for the kids to get in the kitchen and help out. .

    You can prepare them in 15 minutes flat, and they last for ages (as long as you are able to resist them long enough to store them). From all of the recipes I have tried and tested recently, this one is the quickest and best for snacking. Very similar to my chocolate brownie larabars and my energy balls with dates.

    🍽 Ingredients Notes

    Well, you do not need a lot really! I am sure you have pretty much everything in your pantry already.

    Just some whipping cream, butter, sugar, pecan nuts, coconut flakes, chocolate chips, and away you go.

    You will have them ready in 15 minutes flat for an amount of 11 delicious treats.

    Did I mention that they are No-Bake cookies?? The easiest recipes are no-bake, like the cheesecake or the velvety chocolate cake; this cookie recipe is no different. Just whip everything together, let it harden, and ENJOY!

    Step 1
    Grab the saucepan and melt the butter over medium heat.

    Mix in the brown sugar until completely dissolved.

    Slowly add the heavy cream until well combined, and cook for around 10 minutes until it thickens.

    Once the caramel is at a nice thick consistency, take the saucepan off the heat.

    Stir in the pecans.

    And the unsweetened coconut.

    Let it cool down completely so you can spoon or scoop it into small balls on the cookie sheet. The mixture should make 11 cookies in total, and if some liquid starts to seep away from the molds. Do not worry!

    Lastly, sprinkle the chocolate chips over each cookie, and gently press them down, so they are flat.

    Pop them in the fridge to harden for an hour and ENJOY!

    📖 Recipe Variation

    The super good thing with no-bake cookies is that they are very flexible. You can substitute or add any ingredient you fancy, like these delicious variations below.

    Vegan No-Bake Chocolate Haystacks

    Vegan go-ers can also enjoy this tasty snack. Simply substitute the butter for coconut oil, and voilà, you have a perfect vegan dessert. The same works for any no-bake cookies recipe; use coconut oil instead of butter to make it vegan anytime you wish.

    Peanut Butter Chocolate Cookies

    This variation is one of my absolute favs. There are two things I love when choosing a dessert to eat. One is anything caramel, and the other is anything peanut butter. So if your taste buds are similar, I greatly advise you to try this variation of the haystacks.

    All you need is natural peanut butter! You can use smooth or crunchy peanut butter; just make sure it's natural as it needs to be runny and ¼ cup of cocoa powder. Melt the butter and peanut butter in the pan until it is melted, then add the nuts, powdered chocolate, and coconut shavings. Set aside to cool and add the chocolate chips. Press into cookie shapes and store. (Use twice as much peanut butter as normal butter).

    🧊 Storing haystacks cookies

    This recipe is awesome for storing as they last forever! They won't because you will eat them way before that point, but you can keep them in the fridge or the freezer.

    Some people in my house like them straight from the freezer and some like them a bit softer from the fridge. Whichever option you decide to choose, you are sure to enjoy them.

    Simply transfer them to an airtight container once they are solid after the first cooling process, and pop the container in the fridge or freezer.

    Ingredients
     

    • 8 tablespoon unsalted butter
