    Ingredients
     

    • 10 oz Fresh spinach
    • 1 tablespoon Olive oil
    • 2 tablespoon Unsalted butter
    • 1-½ cup Heavy whipping cream
    • ¾ cup Parmesan cheese - grated
    • 1 teaspoon Garlic powder
    • 1 teaspoon Dried basil
    • 1 lb Shredded chicken
    • ¾ cup Mozzarella cheese - divided
    • Salt
    • Pepper
    • Fresh parsley

    Instructions

    • Preheat the oven to 350 degrees. F.
    • Heat olive oil in a large skillet over medium heat.
    • Add the spinach to the heated skillet a little at a time, and cook until wilted.
    • Drain the spinach, and spread it on the bottom of a greased baking dish.
    • In the same skillet, melt the butter over medium heat.
    • Add in the heavy whipping cream.
    • Whisk in the Parmesan cheese, garlic powder and basil.
    • Stir in ½ cup of the mozzarella cheese.

    Notes

    Brussels sprouts size
    If you're using small brussels sprouts, It's better to leave them whole so that they don't become too soft. The large sprouts should be halved to cook perfectly.
    Thick sauce
    If your sauce is too thick, you can make it thinner by adding a small amount of vegetable or chicken broth.
    Garlic
    If you're not a fan of garlic, You can reduce the amount or use a teaspoon of garlic powder instead.
