    🌟 Why this recipe works

Roast beef is a great choice for a sandwich because it is tender, flavorful, and hearty. Caramelized onions add sweetness and depth of flavor that pair well with roast beef, while the cheddar cheese adds a creamy richness to the sandwich.

Roast beef is traditionally served thinly sliced for a roast dinner and sandwiches. You can make roast beef with my bottom round roast, tri tip roast, or eye of round roast or use leftover roast beef from a previous meal.

The sandwich is made with common household condiments like horseradish, mustard, and mayo to keep it juicy and add a touch of heat. The arugula, mayo, mustard, and horseradish flavor balances perfectly with this melt in the mouth roast beef recipe.

This recipe is easy to customize to your liking and can be made with whatever type of cheese and condiments you have on hand.

It's an inexpensive meal that can be quickly prepared in less than 30 minutes on busy weeknights, meal prep for packed lunches, and it's an excellent recipe for picnic days out. 🍽 Key Ingredients

The key to making this ultimate roast beef sandwich is the tender, thinly sliced beef and the sharp cheddar cheese.

    roast beef sandwich ingredients

Condiments - Use mayo, mustard, and horseradish for a spicy, sweet, and creamy sauce.

Bread - Brioche buns are great for sandwiches because they're buttery and soft.

Cheese - Cheddar cheese works well with meats, like steak and thinly sliced roast beef.

Arugula - Arugula adds a peppery flavor and slight bitterness to contrast the sweetness of the buns and cheese.

Beef - Fresh or leftover roast beef thinly sliced (preferably medium rare roast) for tenderness.

Caramelized onions - Make your own or buy readymade from the store to add sweetness and savoriness to the sandwich.

    Substitutions

    Cheese

You could substitute the cheddar cheese for any variety of strong melty cheese, like swiss cheese, Gruyere, or pepper jack.

    Bread

If you don't have brioche, you can substitute it for a baguette, ciabatta, or sliced bread.

    💭 Cooking expert tips

    Heat the sandwich

Once you have assembled the sandwich, wrap it in aluminum foil and place it in sandwich toasty-maker or on a hot griddle for 2 to 3 minutes until the cheese melts.

Cut the beef into thin slices

Make sure to slice the roast beef nice and thin. Otherwise, the sandwich might be too chewy, depending on how well the beef is cooked.

    Toast the buns

To give your buns a lovely golden crunch, melt butter or olive oil in a pan and place the buns on top until golden brown.

    📖 Recipe variations

Upgrade your roast beef sandwich with fun add-ons, like roasted red peppers, pickles, or a beefy gravy. Also check out my leftover roast beef slider recipe!

    Roast beef sandwich with sauerkraut

Sauerkraut is a popular sandwich topping, especially on corned beef sandwiches. But it goes great with roast beef too. Simply add a layer of sauerkraut on top of the beef. Pickles are also another option if you don't have sauerkraut.

    Roast beef sandwich with gravy

Make a quick beef gravy by whisking together 1 cup of beef broth, 1 tablespoon of flour, and a teaspoon of worcestershire sauce in a pan. Once it's thickened, spoon it over the sandwich or pour it into a ramekin for dipping in. Learn more about beef gravy recipes in my 22 best recipes collection.

Roast beef sandwich with roasted red peppers

Try roasted red peppers if you're looking for a little more of a flavor punch. They'll add sweetness and smokiness that pairs well with the tender beef. Simply saute 1 chopped red bell pepper until soft and layer them over the arugula.
