    Casseroles are a sensational way to combine three of your favorite ingredients into one dish. It's no surprise that so many people enjoy the combination of sausage, ham, and cheese in casseroles. It's absolutely delicious, filling, and comes out beautifully when baked.

    This simple low-carb breakfast recipe is one of my all-time favorites. This is usually the first thing on my quick breakfast list because my children enjoy it.

    Furthermore, since my husband and I are on a low-carb diet, this is perfect for us - no bread or other high carb foods. Plus, it's simple to prepare and can be prepared ahead of time. It's not only delicious but also filling and distinctive during the holidays. What else could I ask for?

    This is without a doubt one of the greatest low-carb dishes available. It's a hit with everyone, so you must give it a try.

    🍽 Ingredient Notes

    This low-carb breakfast dish is really easy to make. All you need are a few low-cost ingredients, some basic equipment we all have at home, and a little time (meal prep takes about 25 minutes and cooking time around 35 minutes, so everything comes together in less than an hour).Ingredients

    Eggs

    • 18 large eggs
    • sea salt
    • black pepper

    Gravy

    • 1 pound ground pork sausage
    • 16 ounces softened cream cheese
    • 1 ½ cups beef broth
    • sea salt
    • black pepper

    Casserole

    • 1 pound thin shaved deli ham
    • 4 ounces shredded mozzarella cheese
    • 4 ounces grated Parmesan cheese

    For this gluten-free keto dish, I used ultra-thin sliced ham since they're great for layering and easier to combine with other ingredients. However, whatever sort of ham cut you choose should work just fine. You may always substitute leftovers if necessary.

    🔪 How to make Cheese Breakfast Casserole

    This cheese breakfast casserole recipe is bursting with flavor and only takes a few minutes to prepare. Once prepared, all you have to do is pop it in the oven and your done.

    Set the oven to 325 degrees Fahrenheit (177 degrees Celsius).

    Making the Eggs

    Put eggs in a frying pan. Add salt and pepper to taste. Cook over medium-high heat until eggs are fluffy. Take out of the pan and set aside when done.

    Making the Gravy

    In the same pan, fry the ground sausage over medium heat until it's cooked through and crumble. Stir in the cream cheese and broth while constantly stirring to create a soft simmer. Then reduce the heat to medium-low, continuing to stir, and simmer for 2 more minutes. Season with salt and pepper to taste. Allow to cool completely before using as directed below.

    Making the Casserole
    • Divide scrambled egg mixture in half and the shredded cheese, cooked sausage gravy, and leftover ham into thirds.
    • Add one layer of sausage gravy to cover the bottom of the prepared baking dish. Then add a layer of ham. 
    • After the ham, add a layer of scrambled eggs followed by another layer of gravy. 
    • Sprinkle the egg mixture with the shredded cheese, then repeat the process again: eggs, gravy, ham and cheese.
    • Then add the final layer of ham and top with the remaining cheese and bake for 30-40 minutes or until cheese is melted and the casserole is bubbly. If desired, you can jazz it up with some chopped parsley, cilantro, or green onions.
    • Let it cool for about 5-10 minutes, then serve.

    Here are a few tips and tricks that can help you make the best chees breakfast casserole;

    • For a higher nutritional value, go for lean ham (or whatever meat you opt for).
    • If you want your low-carb breakfast casserole spicy, you can add some green chilies or several dashes of hot sauce to the sausage gravy.

    You may quickly prepare grab-and-go breakfast casserole muffins if your mornings are chaotic. Simply follow the instructions and bake in muffin pans. Even if you're not on a low-carb diet, you'll like these easy egg muffins.

    🙋 How to customize your Breakfast Lasagna

    This wonderful breakfast casserole with ham and cheese (Breakfast Lasagas) is a snap to prepare. However, just as with most recipes, you may vary it to your liking;

    • Crumbled bacon is an excellent substitution if you don't have deli ham or are simply not a fan.
    • Don't have ground sausage on hand? Use crumbled Italian or breakfast sausage instead.
    • Use whatever cheese you have on hand when preparing this sausage egg dish. I think this sausage egg dish will still taste great with any type of cheese. However, shredded cheddar cheese, monterey jack cheese, goat or Swiss cheese are preferable because they add wonderful taste and melt wonderfully.
    • Heavy cream or whipping cream can also be used instead of or cream cheese.
    • You can never go wrong with adding veggies into the mix. It's actually much healthier. Feel free to add whatever veg you have around.
    • Shredded potatoes, hash browns, green onion, and sour cream are great.

    While this low-carb breakfast casserole recipe is downright tasty, it has different versions. You can literally add or remove anything, and it'll still be delicious. In the meantime, you can try these tasty variations;

    Vegetarian breakfast casserole

    If you're vegan, you'll enjoy this combo of mushrooms, bell peppers, onions, spinach, hashbrowns, eggs, cheese, and fresh herbs.

    Mexican breakfast casserole

    This casserole is loaded with veggies, sausage, taco seasoning, cheese, eggs, salsa, and cilantro.

    🧊 Storing and ♨️ Reheating

    This low-carb breakfast casserole is a time-saving gem. It's possible to make it the night before and bake it the next day, or you can store it in the refrigerator all the way. Your call.

    Fridge

    It will last in the refrigerator for 3- 4 days in an airtight container.

    Overnight

    For an easy overnight breakfast casserole, cook and layer all of the ingredients as directed in the recipe without baking. Cover the dish with foil and refrigerate. Remove from the fridge, uncover, and sit at room temperature for a few minutes while you preheat the oven, then bake as directed.

    Freezing

    This easy BREAKFAST recipe freezes well and is similar to many low-carb casseroles in that it can be served cold or defrosted. So don't be afraid to double the recipe for a no-cook weekday breakfast or two. It may last up to three months in the freezer.

    For individual sizes, wrap each piece in a plastic wrap tightly before putting it in a freezer bag or wrapping it in aluminum foil.

    Remember to let the cheese casserole to cool completely before refrigerating or freezing.

    Reheating

    When you're ready to serve, simply thaw the casserole in a fridge overnight, then reheat in a microwave or oven. To reheat a piece, use a microwave. For the whole casserole, an oven is convenient. Bake at 325 degrees Fahrenheit for about 20 minutes or until it's heated all through.

    Ingredients
     

    Eggs

    • 18 large eggs

    • 1 pound thin shaved deli ham

    Instructions

    Eggs and Sausage

    • Preheat oven to 325 degrees
    • In a large skillet or cast iron pan, soft scramble the eggs (seasoned to taste with salt & pepper) then remove from heat and set aside.
    • In the same skillet, cook the sausage over medium heat until thoroughly cooked through. Add in the cream cheese and the broth and stirring constantly, cook until the mixture comes to a soft simmer and thickens. Then reduce the heat to medium-low, still stirring constantly and simmer for 2 more minutes. Season to taste with salt and pepper. Set mixture aside.

    Casserole

    • Divide scrambled eggs in half, divide cheese into thirds, divide gravy into thirds, divide ham into thirds.
    • Using a 3-quart baking dish, add one layer of gravy to cover the bottom of the dish. Then add a layer of ham. 
    • After the ham add a layer of scrambled eggs. 
    • Add a layer of gravy. 
    • After the gravy add a layer of cheese.
    • Repeat the process again: ham, eggs, gravy, cheese.
    • Then add the final layer of ham and top with the remaining cheese.
    • Bake for 30-40 minutes or until cheese is melted. I actually found this tasted better reheated subsequent days so I actually recommend cooking and serving it the next day.

        We have the book, and so made this recipe. it definitely is good overnight. We portioned it out for several individual breakfasts and 3 days later it is still amazing as before!

      I looked twice but may have missed them- could you please tell me what the nutritional values are for this recipe? Carbs/fat/cals? Thank you. It sounds almost like a ricotta pie Italians make during Easter. Can't wait to try it!

      Thank you for this recipe--my whole family actually liked it! I have one correction though. You said 4 layers of gravy, but it's actually only 3, one of them being the light bottom layer. It all worked out fine, I just had a fairly skimpy layer in the middle because I thought I had to get 2 more layers. But the last layer just got to be thicker. Just a little confusing. But oh, so delicious!

        Amy, thanks for letting me know. Since I had followed the recipe from the cookbook, either I changed it and didn't modify the instructions or they had it wrong too. In any case, I tried to adjust the instructions to make more sense.

      This tasted absolutely delicious!! I thought my gravy would be thicker, but it was more soupy, I followed the directions to a "T", was that how it is supposed to be, will it thicken up in the refrigerator?

        Thanks Ginger, I'm glad you enjoyed this recipe! When dealing with gravy there are a lot of variables. Different sausage can have more or less fat, which may alter the consistency. If in doubt I'd simmering it a little longer.
