Cut the red onion in half and thinly slice each half into half-moons.
Finely chop the cilantro.
Heat a large skillet over medium-high heat and toast each tortilla on both sides, flipping after 30 seconds.
Place the toasted tortillas on a plate and spread a small bunch of green leaves in the middle of each tortilla, then the pulled pork, sliced red onion, BBQ sauce, and chopped cilantro.

Brown the pulled porkTo give the tender, slow-cooked pork a lovely caramelization, heat a hot skillet and toss the pulled pork for a minute or so until it crisps up. The browning makes a huge difference to the overall flavor.
