Make the best Keto Blueberry Muffins in 30 minutes with only 6 ingredients. These quick and easy, super moist Keto blueberry muffins come together perfectly with almond flour and fresh blueberries. The delicious hint of almond complements the delicious blueberry taste perfectly.
Preheat Oven:Conventional @ 350°F / 175°C / Gas 4Convection @ 325°F / 165°C / Gas 3
In a medium bowl add almond flour, baking powder, eggs, erythritol and butter (melted).Mix well.
Add blueberries to almond flour mixture.Gently fold in the blueberries.
Pour blueberry muffin batter into baking cups, about half way to the top.
Bake for 25 minutes on the middle rack.
Recipe Notes
To stop blueberries from sinking to the bottom of the muffin, toss your blueberries with a tablespoon of flour. This also helps minimize bleeding in the muffins.
If you use frozen blueberries, bake for an additional 5 minutes.
