Place the roll ups in a single layer within a baking dish.
Cook the ham roll ups under the broiler for 5 minutes, or until the tops are browned and the insides are melted.
Recipe Notes
Make the same filling but with sliced roast beef, turkey slices, pepperoni, or any other type of meat slice that is foldable without breaking. Make sure the slices are thin and round.
Substitute the ham slices for gluten-free flour tortillas to make them vegetarian and gluten-free.
Use what cheeses you have in the fridge if you don't have ricotta or mozzarella. I find that cream cheese, cheddar cheese, Bree, or Monterey jack work well with this recipe.
It takes practice to roll tightly. Stick toothpicks through the ends of the roll ups to keep them tight.
