Ingredients

cups
walnuts
¼
cup
fresh lime juice
about 2 medium limes
¾
cup
unsweetened shredded coconut
separated into ¼ cup and ½ cup

150g cup plain Silk Almond Dairy-Free Yogurt Alternative
Instructions
Add walnuts to a food processor and pulse until ground. You can grind into a powder or flour or leave slightly chunky for more texture.
Add the lime juice, ¼ cup coconut and yogurt, and pulse until blended.
Line a cookie sheet with parchment paper.
Pour the remaining coconut into a small shallow bowl.
Roll the nut mixture into 1 inch balls, rolling each in the coconut and then place it on the cookie sheet.
Place in the freezer for 10 minutes to firm.
Store in fridge until ready to eat.
