While the rice is cooking, make and shred the chicken per that recipe.
Drain the pan and return the shredded chicken to it.
Add salsa and taco seasoning to the chicken and simmer over low heat, stirring until combined and thoroughly heated.
Divide rice into 4 bowls.
Top each bowl of rice with ¼ of the remaining ingredients: chicken, cheese, avocado, lime (you can squeeze the juice over the bowl), onion, sour cream, jalapeno and red pepper. Or any combination of these ingredients depending upon taste.
