Recipe Notes
Don't drench the tortillas! You only need to lightly brush each tortilla with oil. Over oiling, the tortillas will prevent them from crisping to a perfect golden brown color, and they will turn soggy and burn.Tortilla sizeWe use 5-inch tortillas for this recipe cut into 4, but if you are using larger ones, cut them in half and then each half into 3 pieces.Watch the tortillasIt's important to keep an eye on the tortilla chips during cooking, as they turn from lovely golden brown to dark and burnt in minutes.CoolingDon't worry if the tortilla chips aren't perfectly crisp after 4 minutes - they will crisp and become crunchy during cooling.OverfillingResist the urge to fill one air fryer basket than making more batches. You don't need to stack them in a single layer, but make sure there is enough space between each tortilla chip for the air to circulate freely.Turn the tortillasYou need to shake or turn the tortillas at the halfway point to get an even crisp on each chip.
