This bacon-wrapped chicken is the perfect lunch or dinner recipe to impress your guests. The combination of sweet maple syrup and savory bacon wrapped around juicy chicken breasts is sure to leave your mouth watering - and it's super easy to prepare!
Heat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
Place the greens beans in the bottom of a casserole or baking dish and the potatoes on top.
Place 3 or 4 bacon strips in a row on a cutting board and place a chicken breast in the middle. Fold the ends of the bacon strips into the center of the chicken breast and turn the breast over so it's seam side down.
Continue this step with the remaining chicken breasts and place them on top of the potatoes seam side down.
Melt the butter with the olive oil in a small bowl and drizzle over the chicken, potatoes, and green beans.
Season with kosher salt, cracked black pepper, minced onions, and thyme.
Slowly pour the maple syrup over the entire dish and bake in the preheated oven for 1 hour until the potatoes are soft, the chicken is cooked to 165F, and the bacon crispy.
Serve and enjoy!
Recipe Notes
Juicy chickenTo ensure that the chicken stays juicy, make sure to wrap the bacon strips tightly around the chicken breasts. This will help lock in all of the flavors and keep the chicken from drying out.1-inch cubed potatoesTo speed up the cooking time, you can also cut the potatoes into smaller pieces. This will shorten the amount of time needed for them to become tender.Crispy baconIf you want a crispier bacon topping, you can pop the dish under the broiler for a few minutes at the end of cooking.Don't use thick-cut baconThick bacon takes much longer to get crispy than regular-cut bacon strips. So if you want your bacon nice and crispy, choose regular-cut bacon for this recipe!
