12ozpackage4 medium links of sweet apple chicken sausage sliced on an angle
2tablespoonolive oil
12ozbox gluten-free penne pasta
2cupsheavy cream
½teaspoonsalt
½teaspoonblack pepper
½cupgrated parmesan + extra for garnish
1cupChipotle saucesee below
Chipotle Sauce
1-½cupsBBQ sauce
¾cupsolive oil
⅓cuplemon juice
1tablespoonDijon mustard
¼teaspooncayenne pepper
¼teaspoonblack pepper
Instructions
Saute chicken in pan with olive oil over medium heat until almost cooked through.
Add sliced sausage and continue to saute until browned over medium-high heat.
Cook pasta while sausage is browning.
Reduce heat to medium and add cream, ¾ of the chipotle sauce, paremsan cheese salt and pepper. Still until combined.
Add cooked pasta.
Serve drizzled with chipotle sauce and grated parmesan.
Recipe Notes
The recipe for the chipotle sauce easily makes twice as much as you need for this recipe. You can consider cutting it in half. It is quite heavy on the BBQ flavor and so you will not need a whole lot extra for garnish.
