1 ¼cupsold fashioned oatsinstant will make the cookies a bit softer, I prefer traditional
½cupwhitewhole-wheat flour
½teaspoonground cinnamon
½teaspoonbaking powder
½cupraw honey
1egg
¼teaspoonsea salt
1teaspoonvanilla
¼cupchocolate chipsI used organic
2teaspoonbutter
¼cupshredded coconutoptional
Instructions
Preheat oven to 350 degrees.
Line a cookie sheet with parchment paper or spray with oil.
Mix all dry ingredients together in a large bowl.
Mix wet ingredients together in a small bowl.
Add wet ingredients to dry ingredients and blend until combined.
Drop 1 tablespoon servings onto the cookie sheet leaving about 1 inch between. Flatten to create circles.
Bake 8-10 minutes until golden brown.
Allow to cool on baking sheet for 4-5 minutes, then transfer to rack to cool completely.
Recipe Notes
This is a great recipe to add some fruit purees to such as pumpkin or banana or even some veggie purees such as zucchini or butternut squash. Add ¼-1/2 cup of puree to recipe if desired.You could also replace the chocolate chips with raisins.
