Who doesn’t love ramen? It’s quick, easy and so cheap. But store-bought ramen is far from good for you. It contains preservatives, and likely animal-based ingredients. But you can enjoy a healthier version of vegan ramen with very little effort.
You start with this product.
Organic rice ramen from Lotus Foods. They are gluten-free and vegan. I get them from Whole Foods but I’m sure you can get them in other stores as well. I like how simple the ingredients are – brown rice and millet. That’s it. No preservatives.
You cook the noodles as directed by the package, and in the meantime you mix up my quick and easy sauce which you pour over the noodles once they are done cooking.
My son said it was delicious. I agreed, but it’s always nice to get a second opinion.
Easy Spicy Chili Vegan Ramen Noodles
They don’t look overly seasoned but the sauce really did have a lot of flavor.
The packaging for these noodles call 1 ramen cake 2 servings. If you are just serving the noodles as-is, I think you will that’s a very, very small serving. So I made the serving size 1 cake for this recipe.
Easy Spicy Chili Vegan Ramen
- Cook noodles per package instructions.
- In a small bowl, whisk together remaining ingredients.
- Drain noodles, and combine with sauce.
This would be great with added broccoli, snow peas, or your favorite veggies added in. I would saute the veggies in the sauce while the noodles cook. Then pour the sauce and the veggies over the noodles after you drain them.
