Chef Lofaso has created some fun, family-friendly recipes featuring Natural Vanilla and I have recreated one of her delicious recipes at home for my family.
Chef Lofaso’s tropical ice cream sandwich recipe needs only two additional ingredients and it makes a super delicious summer treat for the whole family.
- 2 (1/4-inch thick) fresh pineapple slices
- 1 cup Breyers® Natural Vanilla Ice Cream
- 2 Tbsp. toasted flaked coconut
- Grill pineapple slices over low to medium heat for 90 seconds on each side. Allow to cool briefly.
- Sandwich the softened Breyers® Natural Vanilla Ice Cream between the 2 grilled slices of pineapple. Coat sides in toasted coconut. Slice in half and serve
Wow, this was delicious! I admit I was skeptical but the pineapple was seriously the best compliment to vanilla ice cream and toasted coconut that I have ever tasted. I did have a bit of trouble with the ice cream melting a bit quickly – this just sort of made it more fun to eat. But if you don’t want sticky fingers you can make it into more of a sundae by putting a scoop of ice cream on top of a slice of grilled pineapple and top it with toasted coconut. The bottom line is that you MUST try this amazing combination!
