This the season for….SALAD.
Have you ever gone to a restaurant and had the most delicious salad ever? It’s like, how in the world do they get lettuce and dressing to taste that good? Well, the key is in what you add to the salad and in choosing some surprising ingredients that go beyond your normal lettuce, tomato, onion and cucumber.
I’m talking berries.
Lots and lots of berries.
And feta cheese too. Not sure why, but it works.
This salad was delicious. You won’t want to share it.
When I first had a salad with fresh berries on it, I really wasn’t optimistic about how much I would enjoy it, but it was awesome!
You can use a regular vinaigrette dressing, or use my Triple Berry Lime Vinaigrette, which I really recommend.
I promise that this is a salad people will be taking about for a very long time!

Triple Berry Chicken Salad with Spinach & Feta CheesePrint Rate
- 14 oz fresh baby spinach
- 3 oz fresh blueberries
- 3 oz fresh raspberries
- 3 oz fresh strawberries
- 1 diced or shredded cooked chicken breast or use rotisserie chicken
- 3 oz feta cheese
- 2 oz chopped walnuts optional
- Place the spinach in a large bowl and add berries, chicken and cheese (and walnuts if using) to the top of the salad. Serve with Triple Berry Lime Vinaigrette Dressing.
