Ah the elusive family meal. It’s something most of us hope for – the entire family sitting down to dinner together each night during the week. For some of us, we’d be glad to even get a single night eating together as a family.
But so many things get in the way.
Including the time it can take to prepare a delicious meal for the family. For me, I often have good intentions and then find it’s already 5:30 and the dinner I had planned on making hasn’t thawed completely and takes 2 hours to make. 7:30 dinner isn’t conducive to school-night bedtimes.
September is National Family Meals Month so it’s the perfect time to try and make a real effort towards more frequent family dinners. Thankfully I have a husband who does some of the cooking so that actually helps take some of the pressure off. We can take turns with meal prep which helps make it easier to be able to sit down together for dinner.
Another thing that helps is HORMEL® Taco Meats. HORMEL® Taco Meats come ready to heat and eat.
You can find HORMEL® Taco Meats in the refrigerated meat section of your grocery store. They are available in chicken, beef and beef crumbles varieties. I opted to use the chicken because it’s my all time favorite kind of taco meat and make what I call Skillet Chicken Bacon Ranch Tacos.
Chicken Bacon Ranch Skillet Tacos
- Preheat oven to 400 degrees.
- Line a baking sheet with foil and place bacon on foil so it's not touching.
- Bake for 10-12 minutes.
- Remove bacon from baking sheet and place on a paper towel to get as much grease off as possible. Once cool, cut bacon with kitchen scissors into 1/2" pieces.
- Reduce oven heat to 350 degrees.
- Cook chicken according to package.
- While meat is cooking mix all seasonings with sour cream in a small bowl until blended. Add sour cream and half of the cut up bacon to meat mixture and stir until warm.
- Remove from heat.
- Sprinkle chihuahua cheese and the rest of the bacon on top. Heat for 5-8 minutes or until cheese is melted.
You can serve this in a tortilla shell, over tortilla chips, or like I eat it – in a bowl with some sour cream and extra cheese on top. You can also add any veggies that you like to add to your tacos. It’s pretty versatile.
It’s so nice to be able to spend less time cooking and more time enjoying time with my family. They may be loud, and sometimes all they do is argue, but they are mine. All mine.
Family meals eaten at home have been proven to benefit the health and wellness of children and adolescents, to fight obesity, substance abuse and to make families stronger – creating a positive impact on our communities and our nation as a whole.
What an amazing statement. If something so simple can affect the health and wellness of my children, I’m even more committed to making sure it happens more frequently.
