The other day my daughter and I were hungry for lunch and for some reason neither of us wanted a traditional lunch. We wandered around opening cabinets and opening the fridge and the only thing we could agree upon was a can of organic refried beans.
Beans.
The magical fruit.
But what to do with those beans?
We also discovered a bag of organic corn tortilla chips. Ok, refried beans and tortilla chips, we were sensing a theme and I rolled with it.
I found a block of cheddar cheese in the fridge and pulled out my jar of my homemade taco seasoning and got to work making a very quick and easy bean & cheese dip using clean ingredients, and mostly organic as well, but that is not a requirement for this recipe.
And I was actually surprised how good it turned out.
First, warm up the beans.
Second, add a tsp of taco seasoning mix (check out my amazing taco seasoning recipe).
Third, blend in 1/2 cup of sour cream.
Fourth, melt in 2 oz. of cheddar cheese.
Stir until fully blended and serve with chips. I prefer the organic tortilla chips from Meijer or Target.
I shamefully admit that my daughter and I ate the whole thing in one sitting.
It. was. that. good.
Quick and Easy Bean & Cheese Dip
Ingredients
- One can refried beans
- 1/2 cup sour cream
- 2 ounces cheddar cheese
- 1 tsp taco seasoning mix see link above for my homemade recipe
Instructions
- Heat beans in small sauce pan. Stir in sour cream, taco seasoning and cheddar cheese and stir over low heat until fully blended.
- Serve with your favorite tortilla chips.

ran to the store to get everything to make this and got home and pulled up the reciepe to start making it then i realized i forgot to buy the chips…lol
