Coming up with a dessert that is red, white and blue yet falls into the guilt-free category is totally not an easy feat.
Especially if you expect it to taste good.
Add to that the fact that I have been challenged by Trisha’s version of a Memorial Day / 4th of July festive dessert and the pressure is on.
These patriotic spring and summer holidays are a great time to make beautiful, tasty, yet healthy desserts, especially considering everyone is trying to at least FIT into their swimsuit, not to mention look good in it. Of course the main ingredient in a healthy dessert is fruit, and since is it spring, what better fruit fits than berries? But like Trisha said, you can only do so much with a bowl full of berries to make it exciting.
And clearly brownies and cream cheese are not guilt-free combination either.
So I had to get creative.
And I think I succeeded and managed a totally guilt-free treat that includes a little chocolate to make your taste buds happy.
Any guesses as to what the “logs” are made out of before I get to the recipe?
- 2 small bananas
- 4 tsp cocoa powder
- 4 tsp shredded coconut
- 2 large strawberries
- ½ small container of blueberries
- Slice each banana into 4 pieces on an angle
- Coat banana pieces with cocoa powder
- Place bananas on serving plate
- Sprinkle/spread coconut equally on top of each banana piece
- Top with a slice of strawberry and 3 blueberries
So, what will it be?
