Have you ever read the ingredients on a jar of mayonnaise? Compared to some pre-packaged products, mayo actually doesn’t contain too many processed ingredients.
Except one red flag.
In almost every jar.
Calcium Disodium EDTA.
Calcium Disodium EDTA is a chemical salt that is said to possibly cause kidney and liver damage among other things. It is used to treat lead poisoning and affects the levels of natural metals in your body. It is made from ethylenediamine, formaldehyde, and sodium cyanide.
Sound like something you want in your food?
Me either.
Luckily it’s pretty easy to make your own mayonnaise and you can season it it your exact taste!
Homemade Mayonnaise Recipe
Ingredients
- 1 whole egg
- 3/4 cup olive oil
- 2 tablespoons distilled vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon dry mustard
Instructions
- Place the egg, vinegar, mustard and salt in the Vitamix
- Select variable switch and 1 on the dial
- Turn machine on and turn dial to variable 10
- Flip switch to high
- Blend for about 10 seconds then reduce speed to variable 6 or 8
- Remove the plug in the lid and slowly pour the olive oil in the Vitamix until gone
- Blend until thick (approx. 30 seconds)
- Refrigerate
- Mayo will last 2-4 weeks
Notes
With or without a Vitamix, this recipe is easy to make and has a fresher flavor than any store bought mayo. I can’t wait to experiment with new flavors. My Blendtec blender would also work in a pinch.
If you don’t have a Vitamix, any blender should do, you will just have to experiment for how long it takes to blend up!

I’m so happy to have found this recipe. It is the only mayonnaise recipe I have been successful with. I use avocado oil because its the healthiest. It is so important to start with a few drops in the beginning and then be patient doing a slow, thin pour. I’m able to use the whole 3/4 cup of oil.

I made this today and surprised how nice the consistency was. I made it in my magic bullet. I was however, not overly impressed with the taste but I’m questioning if maybe the oil I used was not fresh enough and that would account for the slightly stale taste. I only used half a cup of oil and it was perfect so I am going to try this again with a fresh oil and hope that makes a difference. I see so much potential with this because you could season it and make so many variations. We often mix mayo and mustard before spreading it on sandwiches so I’m also going to substitute the dry mustard with some fresh mustard. Thanks so much. Even though my first attempt was a little off I know this could be a keeper and will try this again.

Too much oil. Although it’s a warm day and my egg was a little smaller than normal. I suggest starting out with only half a cup and adding more as needed. Was unable to salvage it, too. 🙁 Just sent DS1 out to the chicken pen to get more eggs. Here’s hoping.
