This super easy frittata recipe is low carb and delicious.
Breakfast is my most favorite meal of the day. So much so, that I often serve breakfast food for any meal so I am always looking for creative yet easy ways to serve up a delicious breakfast. I love one-dish meals because aside from a few minutes of initial prep, they don’t require a lot of effort to make and I can clean up while it cooks which suits my slightly obsessive personality perfectly.
When it comes to one-dish egg casserole type dishes, the possibilities are endless. About the only thing you really need are eggs, the rest of the ingredients are up to your imagination. I used to fry up bacon, ham and sausage and cut it up and mix it in with eggs, and I still will go that on occasion but I recently discovered a little trick – using deli meat! Deli meat saves a bunch of time when prepping a one-dish breakfast and it tastes great. You can even use deli meat to make egg muffins.
This time I figured I would use deli meat to make a breakfast frittata. You can put just about anything in this frittata from mushrooms and tomatoes to peppers and onions. My kids are a bit picky about that so I made a basic turkey and cheese frittata recipe.
You can use a casserole dish for this but I prefer to cook it right in a cast iron pan.
Low Carb Turkey and Cheese Frittata Recipe
This recipe has such an easy process and can be customized to suit your tastes. You could use deli ham instead of turkey, add veggies, change up the cheeses, whatever your little heart desires. Low Carb Turkey and Cheese Frittata Recipe
Ingredients
- 1 package turkey deli meat 6-8 ounces
- 8 eggs
- 1/2 teaspoon thyme
- 1/2 teaspoon oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/8 cup shredded Parmesan cheese
- 1/8 cup shredder cheddar cheese
Instructions
- Preheat oven to 350 degrees.
- Line an 8" cast iron pan with the deli meat.
- In a small bowl, whisk the eggs and the seasonings together.
- Pour the egg and seasoning mixture over the turkey.
- Sprinkle each of the cheeses on top of the egg mixture.
- Bake for 20-25 until lightly browned.
