Low Carb Cheesy Chicken and Cauliflower Casserole

Ingredients:

  • 3-4 chicken breasts, chopped in 2″ cubes
  • 1 head of cauliflower, chopped
  • 1 cup sour cream or greek yogurt
  • ½ cup fresh flat leaf parsley, chopped
  • 3 fresh chives, chopped
  • 1 clove garlic, minced
  • 1 teaspoon dried dill
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon cayenne pepper
  • 1 teaspoon paprika
  • ¼ cup heavy cream
  • 1½ cup cheddar cheese
  • 4 strips bacon

Directions:

  1. Preheat oven to 350F and grease or line a 9×9 casserole dish. I like to use a spray coconut oil.
  2. Cook the bacon in a skillet over medium high heat with coconut oil or butter. Alternatively, you can bake it in the oven at 350 for 20 minutes (use a cookie sheet lined with parchment paper).
  3. If you cooked the bacon in a skillet (I love cast iron), add chicken to brown, about 3-4 minutes each side. (If you chop before cooking it will cook faster, but you can chop after it’s seared.) If you baked the bacon, brown the chicken using the coconut oil or butter.
  4. Remove the chicken from the skillet and add the cauliflower, stirring occasionally for 3-4 minutes.
  5. Meanwhile, combine the sour cream, heavy cream and seasonings together.
  6. Combine the chicken and cauliflower in the ranch mixture and then pour into the casserole dish.
  7. Chop up the bacon into small pieces.
  8. Sprinkle the cheese and bacon over the casserole.
  9. Bake uncovered for 25-35 minutes, until the cheese is melted and the chicken reaches an internal temperature of 165F. (You can cover towards the end if the cheese is browning.)

My go-to low carb salad dressing has always been oil and vinegar. But sometimes I want more flavor and something different which is why I came up with this low carb raspberry vinaigrette dressing. It’s so good!

It’s also really easy to make.

I use a Blendtec Blender, which I highly recommend. But you can also use any other kind of blender. The more high powered it is, however, the smoother your dressing will be.

I was surprised at how super easy it was to make my own dressing and how good it tasted. And no ingredients that I couldn’t identify. Plus, since I know exactly what I put in there, I am confident that my carb counts are accurate which is really important if you track your macros for a low carb or ketogenic diet.

  2. Secure lid.
  3. Blend for about 30 seconds or until smooth.

Servings size is 2 tbsp, this recipe makes 8 servings.

Store in the refrigerator. Should last about a week.

If you take a salad to work or on-the-go, you can get some travel dressing containers that hold just the right amount of dressing.

This book is recommended for ages 9-12. Boys will relate to it because the main characters are boys and so my son read it, but my daughter has started reading it as well. Boys will very much connect with these characters, but anyone who has dealt with a bully will too.

After reading it, my son put together some tips for his little sister inspired by the book for how to deal with a bully.

A Big Brother’s Guide to Dealing with a Bully

Dealing with a bully ‘must-dos’:

  • Ignore the bully.
  • Avoid the bully.
  • Tell a trusted adult.

Once you have completed the ‘must-dos’ if the bullying continues try these:

  • Blurt out a funny word to distract them from bullying you. Like “shrinklesporks”.
  • Ask your big brother to dress up in a ninja costume and walk you to school. Or a banana costume. Either is equally concerning.
  • Draw attention to the bully by saying something loud enough for other people to hear. Like “please don’t hurt my rooster.” But you must say it loudly.
  • Begin making animal noises to confuse the bully.
  • Pretend to talk to an invisible friend.

My son was quick to point out that these tips are not for serious bullies causing real physical or emotional harm.

Have you ever wondered how to make a fidget spinner at home? Fidget spinners are all the rage, but they can be expensive, if you can even find them.

Fidget spinners are all the rage, but they can be expensive! This fun list has 12 DIY projects to show you how to make a fidget spinner at home.

It is pretty easy to make your own fidget spinner, and you can make them in a variety of ways. I have curated a list of how to make a fidget spinner at home, so you can get started today.

This is a list of the best homemade fidget spinners I could find.

Some of these are made with simple items like cardboard, PVA glue, clothespins and more. Most of these are pretty simple to make, and one even uses LEGOs to make a custom fidget spinner. Some are a bit more technical and will require help from a parent. You just have to use your imagination and let your ideas run.

Fidget spinners have been used to help calm anxiety, help children with autism, ADHD and more. They can be very beneficial to children and adults.

You can buy fidget spinners at most mass retail stores (I’ve seen them at Target) or even shop online. Or if you are feeling creative, read some of the DIY projects below to learn how to make a fidget spinner at home.

I was listening to the radio the other day, and one parent let their child play with their fidget spinner for five minutes. When the timer went off they had to complete one chore, and repeat until all their chores were done. I thought this was a clever idea, to get your kids interested in getting stuff done.

How To Make A Fidget Spinner – 12 DIY Projects

1. Easy Fidget Spinner

This fidget spinner is made out of cardboard, a toothpick, strong PVA glue, and coins. Has a great tutorial on how to make this yourself.

2. Craft Sticks Spinner

This one has skate bearings in it, and you use some duct tape and craft sticks and more! Fun way to decorate the fidget spinner to fit your own style.

3. LEGO Fidget Spinner

Yes, you read that right, you can make a spinner using LEGO pieces. I thought this was a really clever and unique take on a DIY fidget spinner.

4. LEGO Fidget Cube

If you haven’t played with a cube, it is very similar to a spinner, just in cube form. Keeps you busy and focused on playing, instead of the world around you.

5. Ninja Spinners

These fidget spinners use only paper, no bearing needed. It is super easy to make, and use any colors of paper you want.

6. Bike Chain Fidget Spinner

This one is a bit more complex, as you are using a bike chain to create a custom fidget spinner. It will take some help, but it will look awesome once it is finished!


Some people are using 3D printers to make fidget spinners. Some use bearings but others are super creative and manage to create spinners without a single bearing, only the plastic filament. I was kind of surprised how affordable some of those printers are!

The pink and red spinners in the photo below were made on a 3D printer, the red one doesn’t use a bearing to create the spin. It spins really well too!

7. Ball Bearing and Rubber Bands

Watch this YouTube video on how to create this style of spinner. It uses ball bearings and rubber bands.

8. Plastic Bottle Cap Spinner

Save your plastic bottle caps and create this fun fidget spinner, to keep you entertained for hours. Save your water bottle caps, soda, or even juice caps. You just want to make sure they are all the same size and shape.

9. Wooden Fidget Spinner

This one requires cutting wood, using a Dremel and more. But the outcome is a pretty awesome fidget spinner that would be one of a kind.

10. Optical Illusions

This one is pretty neat, with optical illusions graphics, you can create a really neat and mesmerizing spinner.

11. Magnet Spinner

Create a fidget spinner using magnets. This is a really neat looking spinner, and has a video tutorial.

12. Duct Tape and Marbles

This one does use bearings to create a fidget spinner. It is made out of duct tape and marbles. Very clever.

Routine

Having a routine can really help your productivity. A step-by-step plan becomes a habit and no matter how much coffee you spill, the habit will help you overcome the urge to let it define the rest of your day. Establish a set routine, and do your morning chores in the same order each morning.

Enlist Help

I know it’s hard to assign chores to kids before they head off to school but during the summer months, there is no reason they can’t help tackle the morning chores. Let them sleep in, but make sure they know that after breakfast and before play time, they have a few things to do to contribute around the house.

Don’t be an Overachiever

Be realistic about what you can actually accomplish within the time allotted, keeping in mind that we all tend to be a bit lax during the summer. I have gathered up a variety of the best low carb chicken recipes available. I am a huge fan of chicken, and cooked in a variety of ways. Chicken enchilada casserole, chicken and swiss chards, slow cooker fajita soup, you name it, I will probably love it!

That is why I thought to create a variety of recipes all in one spot for you to enjoy, if you are a chicken fan like me!

With summer upon us, I thought it was a perfect time to bring some low carb chicken recipes to the table. I prefer to eat a bit lighter in the summer, especially on those hot summer days. I find if I eat a heavier meal, that is full of carbs it can leave me feeling sluggish and heavy.

20 Delicious Low Carb Chicken Recipes

Baked Chicken Fajitas: This is a quick and easy low carb chicken recipe to whip up on a busy weeknight. Toss chopped ingredients onto a baking dish, and toss in the oven. Eat as is, or use low carb tortillas for a delicious pairing.

Chicken and Swiss Chard: If you have some southern style cooking cravings, than dive in to this chicken and swiss chard. This dish isn’t only delicious but it is packed full of nutrients. A hearty dish that is very healthy.

15 Minute Low Carb Pepperoni Pizza Chicken: Running short on time, whip up this pepperoni pizza chicken in a flash. Anything that says pizza is a winner in my book.

Chicken Enchilada Skillet: Watch out, this recipe is jam packed full of flavor. You can use rotisserie chicken, so it makes it very quick to make. Before you know it, dinner will be served and your whole family will be smiling.

Low Carb Pan Fried Chicken: Yes, you can still enjoy fried chicken with this low carb breading. You don’t have to say bye bye to that fried chicken, you just alternate it to a healthier version.

Chicken Alfredo Pasta: Instead of using regular pasta, she makes pasta out of zucchini (zoodles). If you have not had them, they are very delicious and you don’t really miss the pasta, as these are a great replacement.

Chicken Enchilada Casserole: Man, this dish I could eat all the time! It is one of my favorites because it is packed full of flavor and easy to whip up. I love to have casseroles in my rotation on the menu, because they are so simple to make. Top with avocado, onion, lettuce, tomatoes, or any other toppings you love.

Slow Cooker Chicken Fajita Soup: Can’t beat a good slow cooker recipe. This is a very hearty dish, that you toss in your slow cooker in the morning, and when you get home from work, supper is served.

Low Carb Chicken Feta Pizza With Cauliflower Crust: This recipe is low carb and low calorie, but very satisfying. Topped with mushrooms, onions, spinach, feta cheese and baked to perfection.

Apple Cider Chicken Tenders: Break free from your dinner rut, and try these delicious apple cider tenders. It has a nice twang to it, and is great leftover.

Fajita Chicken Bake: Here is another alternative to fajitas, it is the same amazing flavor just in a bake. This recipe is easy and delicious, it is worth trying it out.

Chicken Chow Mein: Craving Chinese takeout but don’t want all the carbs? Make this lighter and lower carb version at home, to curb that craving.

Chipolte Chicken Salad: Looking for a salad that has some flavor, try this recipe. It has a nice little kick to it, from the chipotle.

Cheesy Bacon Chicken Casserole: Another perfect casserole dish to add to your menu. This dish is creamy, and delicious. The salty from the bacon pairs perfect with the cheese and chicken. Crowd pleaser for sure.

Low Carb Chicken Cordon Bleu: With only 1 gram of carbs per serving, this dish is a winner. You have the same great taste of cordon bleu, with a lot less carbs.

Green Chili Chicken Bake: Green chilis really add a lot of flavor to any dish. I love eating green chilis in enchiladas, so I know this bake will be a taste bud pleaser.

Grilled Chicken Tenders: These are really tasty with a hint of sweet to them. Great to pair with some broccoli or a cucumber salad, on a warm summer day.

Greek Chicken Salad: This salad can be made super quick, and it so tasty. I love a chicken salad that has crisp celery and then you add in a sweet twist with the grapes, like this salad.

One Dish Queso Chicken Bake: Another delicious Mexican dish you can serve up. This is a nice and cheesy dish with a good kick to it. Spice it up more by topping with fresh jalepenos if you like more heat to your dishes.

You only need 3 additional ingredients in addition to a couple of HERSHEY’S Milk Chocolate bars.

Hershey Simple Milk Chocolate make these easy to make, 4-ingredient no-bake Chocolate and Peanut Butter Cheesecake Cups extra creamy and delicious.

Chocolate and Peanut Butter Cheesecake Cups with HERSHEY'S Milk Chocolate
Serves: 6
 
Ingredients
  • ¼ cup unsweetened creamy peanut butter
  • ¼ cup full-fat cream cheese (softened)
  • ¼ cup coconut oil (melted but not hot)
  • 1 tsp vanilla (optional)
  • 2 HERSHEY'S Milk Chocolate bars (1.55 oz each)
Instructions
  1. Line a muffin pan with 6 paper cupcake liners.
  2. Break HERSHEY'S Milk Chocolate bars into pieces and put in a small saucepan. Fill a second small saucepan halfway with water and set on medium heat. Put the saucepan with the chocolate in it on top of the second saucepan to create a "double boiler" to melt the chocolate. Stir continuously until soft.
  3. Pour an equal amount of chocolate into each of the 6 cupcake liners. Spread chocolate evenly across the bottom so it goes all the way to the edges. It won't be really thick.
  4. Place the muffin pan with the chocolate in the freezer for 10 minutes or until chocolate is hard.
  5. In a small bowl, mix peanut butter, cream cheese and coconut oil together until smooth.
  6. Divide and pour peanut butter mixture evenly over the chocolate in each cupcake liner.
  7. Refrigerate for at least an hour or until peanut butter is firm. Remove from cupcake liners and store cheesecake cups in the fridge until ready to eat. You can allow them to soften slightly at room temperature before eating.

These turned out delicious! Creamy and sweet and like little mini peanut butter cheesecakes with a chocolate crust. Simple, just like HERSHEY’S Milk Chocolate!
