I truly believe that a healthy diet should include some sweet indulgences time and again. Depriving yourself of everything is the perfect way to form an unhealthy emotional relationship with food. Which usually ends up finding you over-eating and beating yourself up about your unhealthy choices.
One of my most favorite indulgences this time of year is a frozen piña colada which I do enjoy probably more often than I should during the summer months. I love, love, love the pineapple and coconut flavors and I would enjoy them every single day if I could. But a traditional piña colada is high in sugar, high in calories and pretty high in alcohol content. None of which are a great match if you are watching your waistline and trying fit into your swimsuit.
Because of my extreme obsession with piña coladas I was determined to come up a healthier alternative that was alcohol-free and lower in calories and sugar. As I planned my recipe and looked through my kitchen for ingredients, I got a brilliant idea (I’m not shy about a little pat on my own back). What if it is as simple as combining pineapple with delicious Silk® Nutchello™ dairy-free beverage? How amazingly easy would that be?
Hmmmm….could it really be that simple?
Silk® Nutchello™ is a dairy-free, Vegan, nut-based beverage that is low in sugar and has only 70-90 calories depending upon which variety you choose. It is also lower in saturated fat and cholesterol and is non-GMO. Nutchello™ comes in three delicious flavors including Toasted Coconut + Cashews, Rich Dark Chocolate + Walnuts and Caramel Almonds + Cashews. I actually have now created recipes with each flavor!

I really do enjoy drinking Silk® Nutchello™ in a glass by itself but all of the flavors make a great addition to any number of delicious better-for-you recipes so I just knew it would be perfect for my healthier piña colada.
The first thing you need to do is to freeze some Toasted Coconut + Cashews Silk® Nutchello™ in an ice cube tray overnight. I love this technique because it means you don’t water down your frozen treats by adding plain ice to them, you get the full flavor effect with the frozen Nutchello™ ice cubes. I always make extra because they are great for iced coffee too (if you haven’t checked out my Easy Salted Caramel Coffee above, you should!)
From here, it is so easy!
I love how fresh this tastes and I love even more how much of a better option this is vs a traditional piña colada. It definitely satisfies my cravings.
This is a quick and easy drink to make for guests and it’s great because it can be served any time of day since it doesn’t contain alcohol. The kids might even enjoy it as well.
Don’t forget to cut up some extra chunks of pineapple and dunk them in your smoothie. YUM!
Now, I can feel indulgent without feeling guilty at the same time which is an amazing way to enjoy a yummy treat.

Dairy-Free Two Ingredient 'Piña Colada' SmoothiePrint Rate
- 1 tray Toasted Coconut + Cashews Silk® Nutchello™ ice cubes
- 2 cups chopped fresh pineapple
- 1/2 cup Toasted Coconut + Cashews Silk® Nutchello™ milk not frozen optional in case your blender needs some extra liquid
- Blend all of the ingredients in a blender until smooth.
- Serve & enjoy!
