Breakfast is my most favorite meal of the day. So much so, that I often serve breakfast food for any meal so I am always looking for creative yet easy ways to serve up a delicious breakfast. I love one-dish meals because aside from a few minutes of initial prep, they don’t require a lot of effort to make and I can clean up while it cooks which suits my slightly obsessive personality perfectly.
When it comes to one-dish breakfast casserole-type dishes, the possibilities are endless. About the only thing you really need are eggs, the rest of the ingredients are up to your imagination. I used to fry up bacon, ham and sausage and cut it up and mix it in with eggs, and I still will go that on occasion but I recently discovered a little trick – using deli meat! Deli meat saves a bunch of time when prepping a one-dish breakfast and it tastes great.
But not just any deli meat, I do insist on using quality, natural meats for my family, which is why I love Oscar Mayer Selects Natural! Oscar Mayer Selects Natural deli meats are minimally processed and have no artificial ingredients or preservatives. They have no artificial colors or flavors, they also don’t contain by-products or gluten! Oscar Mayer Selects Natural allows my family to enjoy delicious cold cuts without having to worry about artificial ingredients which is extremely important to me.
Oscar Mayer Selects Natural deli meats are good enough to eat plain (trust me), but I figured I’d spice it up a bit and make a breakfast frittata. You can put just about anything in this frittata from mushrooms and tomatoes to peppers and onions. My kids are a bit picky about that so I made a basic turkey and cheese frittata.
You can use a casserole dish for this but I prefer to cook it right in a cast iron pan.
- 1 package Oscar Mayer Selects Natural Turkey
- 8 eggs
- ½ teaspoon thyme
- ½ teaspoon oregano
- ¼ teaspoon black pepper
- ¼ teaspoon salt
- ⅛ cup shredded Parmesan cheese
- ⅛ cup shredder cheddar cheese
- Preheat oven to 350 degrees.
- Line an 8" cast iron pan with the deli meat.
- In a small bowl, whisk the eggs and the seasonings together.
- Pour the egg and seasoning mixture over the turkey.
- Sprinkle each of the cheeses on top of the egg mixture.
- Bake for 20-25 until lightly browned.
Some things are too good to be true. Oscar Mayer Selects Natural is not one of them!
