My kids birthdays are a week apart and so we usually celebrate them together. The kids don’t mind – yet, and it saves a lot of time and money to do it this way.
This year we had the party catered by Crazy Fingers Catering. Crazy Fingers Catering focuses on providing the freshest, locally grown and organic ingredients possible. The food is nothing short of fantastic. I’ll have photos of the food for you later.
Because this is about cake.
I was going to hire someone to make the cakes but honestly our budget wasn’t really enough to cover a great cake so I got it into my head that I would bake the cakes for my kid’s birthday party. I’ve never made a cake from scratch before.
I scoured the web for recipes and found some that sounded great. I truly doubted my ability to pull it off, sure that a good recipe isn’t enough.
But I was wrong.
Sometimes all you need is a good recipe.
Obviously presentation wasn’t my focus here. I just hoped and prayed that it didn’t taste like cardboard.
I used organic ingredients except for the powdered sugar for the frosting. I couldn’t find it local and was on a time crunch. Oh also the food coloring isn’t organic but it was all natural vegetable based food coloring.
For the chocolate cake recipe, I followed this one: Chocolate Sour Cream Bundt Cake.
For the vanilla cake I used this recipe: Vanilla Dream Cake.
My yellow cake is not as bright because I used organic sugar which isn’t bleached.
For the frosting I used a basic Cream Cheese Frosting recipe.
I got so many compliments on these cakes. The natural food coloring worked great for the pink frosting but the white frosting was supposed to be green. I kept mixing blue & yellow together and got grey. It still tasted amazing. The cakes were moist and had a sophisticated flavor to them.
Next time I try and make the presentation better too, but I absolutely think these will be my go-to recipes for cakes from now on. My sister even told me that I was elected to make the cake for her daughter’s birthday because they tasted so good.
