How to oven roast beef recipe
A lot of the recipes I am sharing here use a slow cooker, but you can make a perfectly delicious roast beef in the oven. In fact, a true roast beef needs to be oven roasted in order to achieve the perfect medium rare cook to the roast.
- You can use any number of cuts of meat for roast beef, eye of round is popular though. You will want around a 3lb roast.
- Tie the roast in 2-3 places with cotton kitchen twine.
- Brush entire surface of roast with olive oil (about 2 tbsp)
- Season roast all over with kosher salt, garlic powder and black pepper (approx. 1/2 tsp for salt & garlic, 1/4 tsp for pepper).
- Cook at 325 degrees for 25 minutes per lb. of meat.
- Check internal temperature regularly – 125-130 degrees should yield a medium rare roast.
