I love all things spring, but one of my most favorite things about spring are the seasonal veggies. Our vegetable palette explodes with color in the spring and the foods you can create with them almost look too good to eat.
We don’t have an over abundance of spring veggies here yet, but we are seeing some color pop up in the produce section. In preparation for spring, I recently bought a few salad fixins’ and came up with what I think is a clever way to serve salad.
Avocado Salad Bowls Recipe
- 2 Ripe avocados
- Small cucumber
- Grape tomatoes
- Kalamata olives
- Favorite cheese
- Favorite dressing
- Cut avocados in half and carefully remove fruit carefully and chop into small pieces.
- Set skin aside.
- Chop veggies and cheese into small pieces.
- In a bowl, mix chopped ingredients including avocado together.
- Spoon into avocado skin and serve with your favorite dressing.
This is a great way to serve salad as an appetizer or for a dinner party. How cute do these little bowls look?
