Whether or not you participate in the Atkins program (it’s free online BTW, and I just signed up), it is likely that you try to eat healthy foods and provide the same for your kids. But it’s hard, even if you are a stay-at-home mom to find the time to combine healthy eating with all the chaos that goes on in our daily lives.
Atkins has recently introduced a line of Atkins Cuisine, a line of cooking and baking products for delicious homemade recipes. The Atkins program revolves around living a low-carb lifestyle but it also teaches you how to eat healthy by eating fresh natural foods, so even if you do not participate in the Atkins program, these Cuisine products are worth a look.
Atkins Cuisine All Purpose Baking Mix

Atkins Cuisine Penne Pasta

This product has 11g protein, 1g sugar, 18g fiber, 140 calories and 19g net carbs per serving.
So far we have had an opportunity to try the Penne Pasta. I’m still working up the nerve to try and make pancakes with the baking mix, but it is sitting here staring at me. I promised my kids that I would make them this week.
The pasta cooked up like any other pasta would in boiling water and while it was cooking I made a sauce from butter, parmesan cheese and garlic flavored olive oil. The whole time my son insisted that he doesn’t like pasta but I told him he had to try a small bowl and then if he didn’t like it he could have something else.
Once the pasta was thoroughly cooked and drained, I poured my sauce mixture over the penne, mixed it up and served my son a small bowl. I made one for myself as well and gave it a try. The pasta was firmer than traditional pasta but it was good and nothing like the “whole wheat” pasta’s I’ve tried in the past. With 18g of fiber AND great taste, I would easily recommend this product. After a few minutes, my son looked up and me and actually asked for more. He didn’t need to eat anything else, he really liked the pasta!
